Why it happened, in plain English

The filed reason says the products “contain dry milk powder ingredient recalled by the supplier due to potential Salmonella contamination.” The record does not name the supplier. It does show what the ingredient went into: cheese sauce mixes in 25.5 oz and 25 lb bags, a “Creamier” cheese sauce, an Aramark-labeled cheese sauce, an Alfredo sauce and a 20 lb cold-prep cream sauce. Almost all of it is foodservice pack, sent to 41 states. The recall is completed.

Dry sauce mixes are a milk-powder-heavy category, and a single supplier lot can spread across every SKU that shares the base. The cold-prep item deserves a note: a product mixed without cooking has no kill step at the customer either. In general terms, a dry blender in this position has done nothing wrong in its own plant. The control that matters is how fast it can map the supplier’s lot numbers to its own batches and customers, including the customer-branded item.

Who else should care

Dry blenders and sauce-mix makers whose products are built on nonfat dry milk, whey or cheese powder. If one dairy powder supplier recalls a lot, every mix that used it goes with it, and the customer list is the foodservice distributors and contract caterers that bought it in 25 lb bags.

Foodservice operators and contract caterers that put their own name on a supplier’s mix should notice that the recall was filed under the blender’s name, not theirs, but their label was on the bag. Check: whether your batch records tie every supplier lot of dairy powder to a finished-product lot and customer, so a supplier notice becomes a customer list in hours rather than days.
